Bake: Gluten Free Chocolate Chip Cookies

As you know, I’m obsessed with Ambitious Kitchen. Monique’s recipes are healthy and delicious. And for Christmas this year, I was given my culinary dream: a KitchenAid Mixer (thanks, Ryan!). With the combination of the mixer and these ingredients, I baked the most beautiful cookies ever (see for yourself). Here’s the recipe!

  • 2 cups Bob’s Red Mill Quinoa flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup coconut oil, melted and cooled
  • 1 cup dark brown sugar (original recipe is 11/4, but it was a bit too sweet for me)
  • 1 egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • 1 cup chocolate chips
  • Coarse sea salt, for sprinkling

As you can see, these cookies are beautiful! I can’t emphasize how important the sea salt is (mine were pretty sweet, and the salt sort of equalized the flavor). I practically only use coconut sugar, so I may try to make these with coconut sugar next time. Oh, and a week later, the cookies are still super-soft. Absolutely divine!
